With the integration of trayless dining at Towers and Campus Center I thought it would be interesting to find out what other campuses and business thought about the new way of eating. From my research it seems to be going over
very very well. Julian Dautremont-Smith, associate director of the Association for the Advancement of Sustainability in Higher Education recently told USA Today that it is projected that "most of the nations 4,000 colleges and universities will cut trays from their dining services within the next 5 years". There is clearly huge economical and environmental savings from this extremely simple change. This leads to the question, what could local and national restaurants and other businesses be doing to make the same type of simple changes that build up to big changes? Right now Sodexo and Aramark are reaping huge benefits of saving food and energy which are both rising costs right now which are keeping both companies on the cutting edge in the food distribution and dining services industries.
